Pumkin and Lentil Stew
Knocked this up the other night and it was pretty tasty.
1 Medium Sized Pumkin
1 Cup Lentils
1 Tablespoon Soy Sauce
1 Tablespoon Balsamic Vinegar
1 Tablespoon Honey
1 Teaspoon Sage
1 Onion
1 Cup Passata
1 Cup of Stock
Dice and sweat onion in a little olive oil for about 5 minutes or until starting to brown. Add Balsamic, Soy, Honey and simmer for 1-2 minutes.
Dice Pumpkin into bite size pieces and add to onion mixture, cook for 4-5 mins on a medium heat. Add Passata, stock and Sage. Bring to the boil, then reduce to a gentle simmer. Add the lentils and cook until lentils are soft, about 10-15 minutes.
